Menemen: an easy & healthy alternative for breakfast or lunch

Wherever I go, anywhere in the world, I always want to try and taste local food. As you might know I often visit Turkey, at least 3 to 4 times per year. I’ve tasted and replicated lot’s of local Turkish dishes. But the one I like the most is probably one of the most easiest and simple dishes: Menemen. It’s warm, healthy and tasteful. The Turks like to eat it for breakfast. I often make it for lunch.

By the way, this is the way I make it. I never had a recipe, I only have my memories and taste. In the photo you can see I also added some ham. But most of the times I make a vegetarian dish.

Ingredients per person:

  • 2 eggs
  • 1 fresh tomatoe
  • 1/2 red or green  pepper
  • 1/2 red onion
  • parsley, but I prefer cilantro
  • olive oil

Cut the tomatoes, pepper and onions and stir fry for a few minutes in the olive oil. Add the eggs and try to save the egg yolks. Turn down the gas and put a lid over the pan. Let it cook until the egg white is done. Add some freshly chopped herbs and enjoy!

Easy, yummie and healthy.
